It's cloudy & cool here in NE Oklahoma.
It's a perfect morning for lighting a candle in the kitchen window.
This is my first attempt of a little Valentine decorating
We were blessed with a little rain over night.
It was so nice to fall asleep to the sound of rain.
Now for the review of the baked potato soup I told you about yesterday.
Hubby & I gave it two thumbs up!
Delicious!
I modified the recipe a little . . .
six large potatoes instead of 5 lbs.
4 cans of chicken broth = about 7 1/4 cups
seasoned with 1 tsp. salt & 1 tbs. Mrs. Dash original seasoning
garnished with a little shredded cheese
(I was too lazy to fry up bacon & I didn't have any green onions.)
If you like thick potato soup you may want to add a little flour/water mix to thicken it up.
I was inspired to search for a banana cake recipe on Pinterest because we had some ripe bananas.
Here's the recipe.
I changed the recipe a little.
I bought this bag of flax at Sam's recently because I want to add more fiber to our diet.
1 tbsp flax + 3 tbsp water = 1 egg
3 tbsp flax = 1 tbsp butter
Instead of dusting the top with powdered sugar I used a little dab of whipped cream.
Hubby liked it.
I thought it was okay, but a little gooey for my taste.
If I make it again I'll use egg & butter to see if that makes a difference in the texture.

Yum.....the potato soup sounds great! I have a bag of the Flax, too (Costco) & haven't quite learned how to use it, well, I forget to use....lol!

Sounds like adaption is the inspiration for many recipes. :-)
I will cut the recipe back also Carol. We don't feed an army anymore.
I have used milled flax since departing hospital last year. I add BIG spoonful to cereal, gravy, stew, etc and Judy has no idea it's even there.
Your deep window ledge is great, kind of like a mantel for your sink. Note to self: burn candles more often. : ) I forget to do that. May have to try the soup soon, sounds like great comfort food.
Potato soup sounds really good. I am going to try that for tonight. My hubby made a really yummy turkey stock and froze it. So, I am going to use that.
I am coveting that mitten bowl! Glad you enjoyed the soup. I think we all will be constantly be searching for ways to use ripe bananas. I prefer my banana under ripe, if anything.

I missed the baked potto soup, Carol, but went back and saw how delicious it looks. potato soup is a favorite around here.
We also have added ground flax seed to our diet, i sprinkle them over salad.
We got our rain yesterday and are expecting close to an inch friday night, it is so needed around here.

Thanks for your review. Since we like our potato soup a little thicker I might try it using a little less chicken broth or use a bit of potato flakes to thicken it.
