Monday I made the yummiest recipe.
Cream Cheese Mexican Crock Pot Chicken
Here's the picture from Pinterest.
- 4 super large frozen chicken breasts from Sam's
- 8 oz block of cream cheese
- 1 chopped yellow onion
(the recipe called for a can of drained & rinsed black beans, but I didn't have any so I substituted onion)
- can of drained corn
- can of Rotel
Directions:
Put frozen chicken in the crock pot.
Put Cream cheese on top of the chicken.
Add onions, corn & Rotel.
Cover & cook in your Crock Pot on low for 6-8 hours.
Stir the ingredients every 2 hours.
Shred the chicken when it is done.
It's kind of soupy but very good.
The recipe suggested serving it over rice to soak up the soupyness, but I opted not to.
Hubby & I loved it!
Tuesday I made 4 enchiladas topped with a little cheese & baked them in the oven for about 20 minutes on 350. I have enough to freeze for make 4 more enchiladas & a Mexican casserole.
4 meals out of one crock pot recipe!

This looks really good...I just started using my crock pot again and will definitely try this. Also, clean-up is really simple as I use the crock pot liners. Thanks for sharing.

That crock pot recipe sounds good, and reminds me of South Of The Border soup that I make: 4 large boneless chicken breasts, 1 can black beans drained and rinsed, 1 can whole kernal corn drained and rinsed and 2 jars of salsa (30-40 oz. total). Just layer in crock pot and cook all day. Shred chicken before serving. I also throw in rice or orzo at the end if I want it to be less soupy.
