Mighty Good . . .

I seem to be making a lot of posts about recipes lately.
One reason could be I really haven't gotten down to the business of redecorating the house after Christmas and I've been spending too much  time pinning recipes & other great ideas.  Most spaces & shelves are sparsely decorated with stuff just to make it look like somebody lives here.
Anyway, back to the subject of food.

Yesterday I cooked a mess of beans for our evening meal.
Sometimes when I cook beans I add a can of Rotel to spice it up, but this time I just used salt, pepper, garlic powder, worcestereshire sauce & ham chunks.  
I also baked a pan of cornbread using a new recipe from Pinterest.


Buttermilk Cornbread Recipe

 Ingredients

3/4 cup butter - melted
3 eggs - slightly beaten
1 1/2 cups buttermilk
2 1/2 cups all-purpose flour
1 cup cornmeal
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar

In a large bowl, mix all the ingredients together.
Pour into a greased 9x13 pan.
Bake at 400 degrees F. for 23 to 28 minutes or until a toothpick inserted in the middle comes out clean.  I baked mine for almost 40 minutes because the first time I cut into it wasn't done.  Lately I've been thinking my oven isn't working right.  

I didn't have any buttermilk & had planned on making my own by adding a little white vinegar.  Oops, I didn't have any.  I just added 2% milk.

The cornbread was wonderful & the beans very tasty. 

Of course we'll be eating beans & cornbread for several days, which means I won't have to cook.
I love leftovers!

Hi Carol, your beans and cornbread look delicous. I think that will on our menu tomorrow or Thursday.
My DH smoked ribs and chickens yesterday so we have leftovers today too.
I just don't understand why people turn up their noses at leftovers.

BUTTERMILK in the cornbread? I'm sold! That practically guarantees a wonderful product. Beans are so good for you, and I love leftovers, too. My navy baked beans are in the over right now. Keep working on that winter decor, or it will be spring before you know it!

My dad would have been over at your house for the beans and cornbread! Being from the South, this is what my family calls "Country Boy Food". My dad would gladly eat beans and cornbread with buttermilk every day if my Mom would serve it. The rest of us like more variety, so this meal doesn't come that often.

I'll have to tell my brother that someone else uses Rotel in beans. He likes spicy food and is always putting Rotel or a can of green chilis in almost everything he eats.

Oh! that cornbread looks so good. We are on a fat free diet and that is a no no for us. I miss The Bennie's biscuit too.
