A New Recipe For An Old Favorite

Friday afternoon, I was trying to figure out what to make for dinner.  When I remembered that I had some leftover roasted chicken from Sam's, I knew I wanted to make chicken pot pie.
Here's my 'madeup' recipe for my version of chicken pot pie.

Carol's Chicken Pot Pie
 1/2 cup diced carrots
One onion diced
1 can green beans, drained
1 can cream of chicken soup
1 cup milk
3 cups chopped roasted chicken
1 can Pillsbury crescent rolls

Instructions
Boil carrots & onions until tender, drain.
Add 1 can of drained green beans & 1 can cream of chicken soup.
Slowly add 1 cup milk.
Add chicken.
Season with garlic pepper & Mrs. Dash Table Blend/Salt Free seasoning.
Cook until bubbly

Spray a casserole dish with cooking spray.
Pour mixture into dish.
Unroll crescent rolls & cover the mixture.
Bake for 25 minutes in 350 oven until brown & bubbling.

Our kids were here for dinner.  All grownups & 1 grand kid liked the chicken pot pie.  Ethan asked me when I was going to make it again.
Here are the leftovers that I sent home with them.
The crescent roll topping was really good.  I'll never make chicken pot pie with biscuits again.

If you try this recipe, let me know what you think.

Words That Inspire

Signs of spring are slowly emerging.here in Oklahoma.  I keep watching for color on my red bud tree.
So far it's still in winter hibernation.  Looking forward to seeing the glorious magenta blooms.

Some New & Not So New Decor

It's very windy here in NE Oklahoma.  Looks like March is going out like a lion.
I'm so excited for spring to begin.

Some new decor pieces have added to our living room area.
Sis Sue gave me this sweet block sign when she was visiting last month.
I'm going to print & frame some pictures of the littles & make a new vignette for the music room.

I found this adorable mini curio cabinet on my last junkin' trip to Jenks, Ok. It's just a short 10 minute drive from our house.
It's 12 " high.  I love the chippy, shabby chic look.  It will be a great piece to decorate for the seasons.
Right now it's on the top right shelf of the TV cabinet.

Sis Sue helped me decorate the cabinet when she was visiting in January. We used some vintage books & my collection of Lois Linski books with several items that I've had for a long time.
Here are the other shelves on the right side.
The left side of the cabinet.
That's my Grandma Ruby with their horse, Old Chalk.  My Grandpa Ralph rode Old Chalk when he was checking the pipelines for the oil company he worked for.
On this shelf, a basket of faux strawberries to go along the book, Strawberry Girl.  I found the strawberries & some faix cherries at the same antique mall in Jenks.  $3.99 for each bag.
Another group of Lois Linski books.
You can read more about this children's book author here in a post I made in 2009.

Back In Business

I'm back to blogging again.  A big thank you & hugs to my son for getting my lap top running again.  It's so nice to have a techie in the family.  It all started when he was in kindergarten.  One day he told his dad that he had played with the "pewter" at school.

I want to thank everyone for the prayers & positive thoughts concerning my RA diagnosis.  Those prayers are helping.  I'm feeling better with each passing day.  Apparently the meds are finally kicking in.
We enjoyed a fun afternoon of family time yesterday.
Emma helped me set the table for Sunday dinner.  She's so eager to learn to do new things.

After dinner we baked St. Patrick's Day cupcakes.
The kiddos enjoyed helping Nana & Mommy add ingredients to the cake mix.  It was exciting to see the batter turn green after the food coloring was added.  Adding green sprinkles to the icing was super fun.
They really enjoyed eating their cupcakes.
Emma's favorite part was the icing.
Ethan gobbled up his entire cupcake in a flash.

We've already made plans to decorate Nana & Papaw's house for Easter & bake Easter cupcakes.
I can't wait!

How Great Thou Art

Oh Lord, my God
When I in awesome wonder
Consider all the works
Thy hands have made

I see the stars
I hear the rolling thunder
Thy power throughout
The universe displayed

Then sings my soul
My Saviour, God, to Thee
How great thou Art
How great thou Art

Spring Around The House

If you're like me, you are so anxious for spring to arrive.
The snow from last Sunday's storm has finally melted away.  Today it is warm & windy, 61 degrees.  The winter weather roller coaster ride continues tomorrow with a predicted 38 degree high.
Signs of spring are appearing around the house.
A fresh looking spring basket on our front door.

Birds of a feather . . .
These bird pillows came from TJ Maxx.
HOPE
If winter comes can spring be far behind?
I'm ready to see my yard full of Robins.

Back To Blogging

Hello, everyone!  I have blogged very little since the new year began.  The reason has been a simple one.  I just haven't felt like it.  After weeks of doctor visits & testing, I have found out I have rheumatoid arthritis.  Every night is a painful, sleepless challenge.  I'm waiting to see if the medication will kick in & ease the pain.
I'm ready for spring & warmer days filled with sunshine.
My neighbors, John & Deborah gave me these beautiful spring flowers the other day.
Thank you guys for putting a smile on my face!

My sisters recently visited for 2 weeks.  Their presence lifted my spirits & challenged me to keep going no matter how I feel.  They cooked for us, shopped with me, & helped me do a lot of organizing of closets & drawers.  We love organizing & purging.  When we work together we are a force to be reckoned with!  We took many car loads to Goodwill.  I  love the feeling of having everything in order. Thank you Susan & Mary for pampering me & showering me with so many unbelievable gifts.

This is the spring mantel  that my sisters help me create.
New items from Hobby Lobby are the candlesticks, green boxwood balls, green bird & the picture frame.
We found the bird to the left of the frame at our favorite junkin' place, River City Trading, in Jenks.
I printed the sign off of Pinterest.
