PW Biscuits . . .

"Rise and shine! The cat heads are getting cold!"
My dad used to say that when he'd wake us
for Sunday breakfast.
I never could figure out what biscuits and cat heads
had in common.
This morning I got up early to make
PW Buttermilk Biscuits.
The recipe is on page 44-45.


Okay, I can read.
I can cook and bake.
But, something went terribly wrong.


Look at this mess I created!




I baked the biscuits for 13 minutes (11 to 14) in
a 450 degree oven per the instructions.
Obviously I did something wrong.
Baked way too long?
Rolled out too thinly?
Oven too hot?


Hubby assured me that hard biscuits
are better than no biscuits at all.
I'm not sure about that!
; )

We did eat the two biscuits on our plate.
The taste was good, but the texture too crunchy.

I don't fault the recipe, just me the baker.
Maybe I'll try again someday . . .

Oh you'll have to try again! Biscuits are just the best warm, light and fluffy. Let us know how it goes....
Kudos to you for showing this experience. I think I would have enjoyed them anyway.

I'm thinking you might have rolled them a bit too thin. I don't know if PW comments in the recipe or not but be sure when you cut them to cut straight down, then pull the cutter straight back up. Don't twist your biscuit cutter. Doing that somehow keeps them from rising well.

Darn it.... I feel for you! I just hate when a recipe doesn't turn out like it's supposed to . It is frustrating!
Oh well.... some other day, you can try it again.
Maybe you should stick with the sweets :) (wink..wink).

Based on my biscuit making experience I agree they were too thin, cooked at too high of tempature...I pat mine out to about 3/4 inch...bake at 425 degrees...and no twisting of the biscuit cutter...also a question...was the baking powder fresh.

So sweet of your husband to be nice about it...he probably knows you are the best cook in the home and just had this one failure.

Bake biscuits again...you will learn the tricks to making them perfect.

My daddy made breakfast With biscuits and country ham on Sunday.

When the old timers call a biscuit a cat head they were talking about catfish. They would say she made biscuits as big as a catfish head.

My guess is you rolled them too thin. They should be an inch high, at least. I even measure the height of mine, sometimes, to make sure they are that high. Also, cut straight down with the glass and don't twist it until you have cut completely through the dough. One more tip that really helps to ensure a nice, thick biscuit is to "plump" the dough round with your hands with a circular motion after rolling and before cutting. Lastly, every oven is different and mine never take quite as long as the recipes says to bake. So watch the color to determine doneness. Good luck, and try them again!

It took me years to bake a good biscuit. Don't worry, practice makes perfect. Aren't hubbies who think everything tastes great great? Yours sounds like a sweetheart.

I grow-up making biscuits and my grandpa always said that a good gravy goes best with hard biscuits.
Remember don't over knead the dough and roll them out thicker.

I have made biscuits that look like these more than once. And, like several others have already commented, I believe they were rolled to thin. But, don't give up, when you get it right, they are divine!

I know biscuit making is a fine art and I know you aren't supposed to handle the dough too much. Therefore, I make drop biscuits. LOL Keep at it. Thanks for sharing your story about your dad and being "real" with the bad biscuits.

Well at first you don't succeed, try, try again:) I have had similar experiences with cooking but I haven't make biscuits before, so I don't know about that. Thanks for sharing your woes!

You are so cute!! I love that you shared your biscuit experience with us. I did the same thing a couple years ago. Mine could have felled a giant !! Hard hard hard!!
I do believe that you rolled your dough too thin. Bet they will be great next time.

Drives me nuts when a recipe does not come out. I would search around on line and see if anyone else has had the same issue. Too thin and too high a temp would be my guess? I tend to be a little skeptical about PWs book since she has no formal culinary schooling.

Hmmm... it's hard to say what might have gone wrong, but next time don't call them biscuits... call them crispy cakes or something like that.
