They should...My guess is you rolled them too thin. They should be an inch high, at least. I even measure the height of mine, sometimes, to make sure they are that high. Also, cut straight down with the glass and don't twist it until you have cut completely through the dough. One more tip that really helps to ensure a nice, thick biscuit is to "plump" the dough round with your hands with a circular motion after rolling and before cutting. Lastly, every oven is different and mine never take quite as long as the recipes says to bake. So watch the color to determine doneness. I don't know if PW comments in the recipe or not but be sure when you cut them to cut straight down, then pull the cutter straight back up. Don't twist your biscuit cutter.
