Another Crock Pot Creation . . .

I'm on a roll with my crock pot & Pinterest!

Monday I made the yummiest recipe.

Cream Cheese Mexican Crock Pot Chicken

Here's the picture from Pinterest.

- 4 super large frozen chicken breasts from Sam's

- 8 oz block of cream cheese

- 1 chopped yellow onion

(the recipe called for a can of drained & rinsed black beans, but I didn't have any so I substituted onion)

- can of drained corn

- can of Rotel

Directions:

Put frozen chicken in the crock pot.

Put Cream cheese on top of the chicken.

Add onions, corn & Rotel.

Cover & cook in your Crock Pot on low for 6-8 hours.

Stir the ingredients every 2 hours.

Shred the chicken when it is done.

It's kind of soupy but very good.

The recipe suggested serving it over rice to soak up the soupyness, but I opted not to.

Hubby & I loved it!

Tuesday I made 4 enchiladas topped with a little cheese & baked them in the oven for about 20 minutes on 350. I have enough to freeze for make 4 more enchiladas & a Mexican casserole.

4 meals out of one crock pot recipe!

Remembering The Big One . . .

This time last year we were experiencing a blizzard.

It started on Jan. 31 and when it finished on Feb. 1 we had a record snowfall.

Our town was literally paralyzed for several days.

Everybody stayed home.

We made some great memories because the kids stayed with us.

This winter we have been enjoying beautiful, warm days and nights.

At 6:00 AM yesterday morning it was 59!

High temperature during the day was 70!

We have a lot of winter days ahead of us.

We'll see if this great weather continues.

Yesterday while shopping at Sam's I was looking for Pistachios.

I didn't want to buy the $15.00 bag so I put it back on the shelf.

A few minutes later I found this . . .

Oh my goodness!

Salt & Pepper Pistachios!

They are so delicious!

When I searched the web for info about the company I
discovered they also have chili & lime as well as garlic & onion.

My addiction with Pinterest continues!

Raise your hand if you're addicted too!

One of my goals for 2012 is to try new recipes.

Yesterday I made Crock Pot Meatloaf
for our dinner.

Ingredients

2 lbs. ground round

1 c. ketchup, divided

1 1/2 oz. package meat loaf seasoning

3/4 c. fine, dry bread crumbs (store-bought)

2 eggs, large

1 c. (4 oz.) shredded sharp Cheddar cheese

2 tsp. prepared mustard

1. Combine beef, 1/2 cup ketchup, and next 4 ingredients in a large bowl; shape mixture in a 5-inch by 7-1/2-inch loaf. Place loaf in a lightly greased 3-quart oval crock pot.

2. Cover. Cook on High for 1 hour. Reduce heat to Low, and cook 3 hours.

3. Remove crock from cooker, and carefully pour grease off meat loaf; return crock to cooker.

4. Stir together remaining 1/2 cup ketchup and the mustard in a small bowl; spread over meat loaf.

5. Cover. Continue to cook on Low for 45 more minutes or until thermometer inserted into meat loaf registers 160 degrees.

6. Remove meat loaf from crock pot, and let stand 10 minutes before serving.

I made a few substitutions and changes to the recipe

using what I had on hand.

Lipton onion soup mix instead of meatloaf seasoning

oatmeal instead of bread crumbs

also added a little flax

Colby & Monterrey Jack instead of cheddar

I made two small loaves instead of one large.

Now for the review . . .

Snowy Thoughts . . .

I love snow!

My love of the white, cold, fluffy stuff began long ago.

Here I am as a toddler playing in the snow.

I love everything about these pictures.

The little wagon, my snow clothes & the cute snowman standing beside our old Christmas tree.

I love 'snow days'!

You know, the days when school is cancelled.

I don't remember too many 'snow days' from my school years.

One time in high school classes we were out of class because of a big snow. Most of it melted away before the end of the day.

My favorite 'snow day' memories are those from my 30 years of teaching. During the winter of 1979 I think the ground stayed white from January to March. We missed many days in the classroom that year.

Throughout the years I have to admit I was just as excited as the students were when it was announced that school was closed. Of course, the reality of those days having to be made up were pushed aside.

Here's my post from Jan. '09 about Wilson.

So far our winter has been mild & warmer than normal.

Only a little snow on Jan. 12th.

I'm still hoping for a beautiful snowstorm!

Soup Review . . .

Good Wednesday morning to you all!

It's cloudy & cool here in NE Oklahoma.

It's a perfect morning for lighting a candle in the kitchen window.

This is my first attempt of a little Valentine decorating

We were blessed with a little rain over night.

It was so nice to fall asleep to the sound of rain.

Now for the review of the baked potato soup I told you about yesterday.

Hubby & I gave it two thumbs up!

Delicious!

I modified the recipe a little . . .

six large potatoes instead of 5 lbs.

4 cans of chicken broth = about 7 1/4 cups

seasoned with 1 tsp. salt & 1 tbs. Mrs. Dash original seasoning

garnished with a little shredded cheese

(I was too lazy to fry up bacon & I didn't have any green onions.)

If you like thick potato soup you may want to add a little flour/water mix to thicken it up.

I was inspired to search for a banana cake recipe on Pinterest because we had some ripe bananas.

Here's the recipe.

I changed the recipe a little.

I bought this bag of flax at Sam's recently because I want to add more fiber to our diet.

1 tbsp flax + 3 tbsp water = 1 egg

3 tbsp flax = 1 tbsp butter

Instead of dusting the top with powdered sugar I used a little dab of whipped cream.

Hubby liked it.

I thought it was okay, but a little gooey for my taste.

If I make it again I'll use egg & butter to see if that makes a difference in the texture.

What's For Dinner Tonight?

The crock pot has been my cooking companion lately .

Last week we dined on pinto beans then, chili.

Tonight's dinner is another crock pot creation.

I found the recipe on Pinterest.

Baked Potato Soup

Ingredients:

- 5lbs Russet Potatoes, washed but NOT peeled. Diced into 1/2 inch(ish) cubes

- 1 large yellow onion, diced

- 10 cloves of garlic (you can use whole, crushed, or minced)

- 8 cups chicken stock

- 16 oz cream cheese

- 1 TBS seasoned salt or all-purpose seasoning

Garnishes:

- Crumbled bacon

- Shredded cheddar cheese

- Green onions

Directions:

- Add potatoes, onion, garlic, seasoning and chicken stock to slow cooker.

- Cook on high for 6 hours or low for 10 hours.

- Remove and puree the garlic cloves (if you used whole cloves) along with 1/2 to 1/3rd of the soup, and then reintroduce to the remainder in the crock pot.

- Stir in the cream cheese and allow to melt. Stir every 10-15 minutes until soup is well blended.

- Top with your choice of garnishes & serve!

Yields about 10-12 servings.

I'm so anxious to see how this turns out!

Random Monday Memories #23 . . .

I ran across this picture that my son scanned for me back in August.

I think this was taken in May 1985.

(Thanks, Sis Sue, for helping me get the date right.)

Wish I had taken time back then to write on the back of all pictures.

These adorable children are my nephew, Grant, niece, April, my son, Bobby and Ashley (she calls me Aunt Carol & I love it), my brother-in-law's niece. They are sitting on the bench in front of my parents' shoe store in my hometown.

We had all gathered downtown to watch the annual reunion parade.

So long ago & brings back so many memories.

Now we're making new memories with new little ones in our family.

Grant's little 8 month old Iris, April's 4 year old Elsie and Bobby's 2 children (my grandkids), 2 year old Ethan & 10 month old Emma.

April & her husband, Jason are expecting another little girl in May.

They have been trying to decide on a name for the new baby & I suggested several names which included my #1 pick, Madison.

Guess what?

They like it & have decided on the name Madison Elaine.

I'm so excited!

This country chicken has been part of my kitchen decor for many years.

I bought these dishes at Target many years ago.

I've been able to find extra plates at flea markets so I now have a total of 15.

We use them every day.

The braided placemats were a Christmas gift from my sister, Mary, this year.

The flatware belonged to my Mother. They're tarnished, but I like them that way.

Cup of Joe, Java, Coffee . . .

When I was a kid I hated the smell of coffee brewing in the morning. Back in those days coffee was made on the stove top or in an electric percolator.

It always smelled like something was burning & it made me sick to my stomach. In fact, it made me so sick I could never eat breakfast before going to school. Mother would give me a nickel to buy chocolate milk at school & I would drink it during morning recess.

Fast forward to 1974, my final semester of college.

I was student teaching & carrying 21 hours.

This is when I started drinking coffee in the faculty lounge.

I did not like the taste of black coffee, but I did like it with a little milk & sugar.

The cafeteria sent over a large pan of buttery, cinnamon toast every morning.

I was hooked on the great combination of caffeine & carbs!

Christmas 2009 Hubby & I bought a new coffee maker as a gift to each other.

I love my Keurig!

Fresh coffee in seconds.

I usually have 2 cups every morning, sometimes 3.

I still add a splash of milk and my sweetener of choice, Splenda.

K-cups in an apothecary.

We also make hot chocolate in our Keurig.

Dark chocolate or cafe mocha are the choices . . .

stored in my Mother's cookie jar.

Mighty Good . . .

I seem to be making a lot of posts about recipes lately.

One reason could be I really haven't gotten down to the business of redecorating the house after Christmas and I've been spending ~~too much~~ time pinning recipes & other great ideas. Most spaces & shelves are sparsely decorated with stuff just to make it look like somebody lives here.

Anyway, back to the subject of food.

Yesterday I cooked a mess of beans for our evening meal.

Sometimes when I cook beans I add a can of Rotel to spice it up, but this time I just used salt, pepper, garlic powder, worcestereshire sauce & ham chunks.

I also baked a pan of cornbread using a new recipe from Pinterest.

Buttermilk Cornbread Recipe

Ingredients

3/4 cup butter - melted

3 eggs - slightly beaten

1 1/2 cups buttermilk

2 1/2 cups all-purpose flour

1 cup cornmeal

1 tablespoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup sugar

In a large bowl, mix all the ingredients together.

Pour into a greased 9x13 pan.

Bake at 400 degrees F. for 23 to 28 minutes or until a toothpick inserted in the middle comes out clean. I baked mine for almost 40 minutes because the first time I cut into it wasn't done. Lately I've been thinking my oven isn't working right.

I didn't have any buttermilk & had planned on making my own by adding a little white vinegar. Oops, I didn't have any. I just added 2% milk.

The cornbread was wonderful & the beans very tasty.

Of course we'll be eating beans & cornbread for several days, which means I won't have to cook.

This is one of our purchases from our Saturday shopping at Sam's.

10 pounds of beans for $8.64

Bottom line, beans are healthy & good for you.

They're cheap and easy on the budget.

3 cup bags enough for 8 meals

Hubby & I both like beans & cornbread, but

we wouldn't want to eat them weekly, maybe every 6 weeks would be okay.

I did a little search on Pinterest for pinto bean recipes.

Here are a couple I may try.

Now this next recipe looks interesting.

Kari & the kiddos came over to hang out yesterday.

They stayed for dinner & she helped me fix the meal.

When I saw this recipe on Pinterest I immediately knew I would try it.

Tilapia Parmesan

2 lbs tilapia fillets (orange roughy, cod or red snapper can be substituted)

2 tablespoons lemon juice

1/2 cup grated Parmesan cheese

4 tablespoons butter , room temperature

3 tablespoons mayonnaise

3 tablespoons finely chopped green onions

1/4 teaspoon seasoning salt

1/4 teaspoon dried basil

black pepper

1 dash hot pepper sauce

Directions:

Preheat oven to 350 degrees.

In buttered 13-by-9-inch baking dish or jellyroll pan, lay fillets in single layer.

Do not stack fillets.

Brush top with juice.

In bowl combine cheese, butter, mayonnaise, onions and seasonings.

Mix well with fork.

Bake fish in preheated oven 10 to 20 minutes or until fish just starts to flake.

Spread with cheese mixture and bake until golden brown, about 5 minutes.

Baking time will depend on the thickness of the fish you use.

Watch fish closely so that it does not overcook.

I did not have lemon juice. I substituted Miracle Whip for mayonnaise.

Kari mixed the ingredients . . .

and spread it on the Tilapia.

As you can see our dish doesn't look like the picture from Pinterest.

Next time I will use mayonnaise & see if that makes a difference in the browning.

I even baked it longer than the recommended 5 minutes.

It was very tasty and I will make it again.

Friday Show and Tell . . .

I have several recipes that are written in my Mother's handwriting.

It gives me a warm feeling when I see these cards.

They bring back sweet memories of the delicious things my Mother prepared for her family.

I thought this recipe was for egg custard in cups, but after reading it I saw it is was for a pie.

Mother's Egg Custard

2 eggs

1 cup milk

1/2 cup sugar

2 tbsp flour

Separate egg yolks. Beat these add 1/2 cup of the milk. In Measuring cup add the flour to the sugar. Mix these & to the mixture add the other 1/2 cup milk. Combine the 2 mixtures & stir. Add Vanilla if desired.

Pour this into a pie shell which has been places on the stove burner, on low heat, for about 1 minute or just long enough to blister but not to brown. Cook at 350 until firm. Beat egg whites with 4 tbsp sugar added. Spread the egg whites on the custard & brown. (3 eggs may be used to make a thicker pie)

Here's a recipe I found on Pinterest

Old Fashioned Custard

• 4 large eggs

• 1/3 cup sugar

• 1/2 teaspoon sea salt

• 1/2 teaspoon vanilla

• 3 cups of whole milk, scalded

• Freshly grated nutmeg

1. Preheat the oven to 375˚F.

2. Beat the eggs slightly. Add the sugar, salt and vanilla; whisking constantly, slowly add the scalded milk.

3. Strain the mixture into the custard cups (I needed 7 cups); grate nutmeg over each custard, and place in a pan containing hot water. The water should cover the cups up to the level of the custard.

4. Bake for about 30 to 35 minutes, or until a knife inserted into the center of the custard comes out clean.

Mother's recipe is for less eggs & milk. Also the milk is not scalded.

I'm going to use her recipe add 1 more egg, scald the milk & omit the flour.

I'll let you know how it turns out.

Goals For 2012 . . .

I always have ideas floating around in my head about things a want to do.

This year I'm writing down my goals instead of just dreaming about them.

Here's a list of some things I want to work toward accomplishing in 2012.

* sewing projects for the grandkids, gifts & home.

* organize & purge closets, cabinets, drawers, attic & garage

* try more new recipes

* copy videos to CDs & scan old pictures

I'm going to be realistic & leave myself some wiggle room.

Meet Sammy . . .

Christmas bling/decor is finally packed away.

Hooray!

As soon as the Christmas wreath was off the front door I replaced it with Sammy the Snowman.

Isn't he cute?

He was one of my classroom decorations for January when I did a full month of reading lessons about snow.

Sammy is not your ordinary snowmen.

He's an OSU cowboy.

As you can see he's dressed in orange & black and swinging a lasso.

This little poem is so cute.

He probably won't be finding any snow anytime soon.

The weatherman says no winter weather is expected in January.

As much as I love snow this forecast is okay with me.

Last winter was a record breaker here in Oklahoma.

We have been enjoying unseasonably warm weather here for several weeks.

I'm enjoying it while I can.

I'm not at all happy with the look yet.

I love my new Mary Engelbreit calendar!

I have received one (or two) each year for Christmas for several years.

Before I retired I had one on my desk at school & one at home.

I enjoy seeing the calendar sitting on the ledge above my kitchen sink.

Always a new thought to ponder & perhaps apply to daily living.

While I'm on the subject of life being sweet, in this case it's too sweet.

If you're like me you find tons of great ideas on Pinterest!

Every time I find something I like I pin it to one of my boards with intentions of "possibly" making it.

I did make some tasty goodies back in the fall.

(read about it here)

I also found inspiration for decorating with red & white for Christmas.

(read about it here)

I decided to make this appetizer for New Years Day.

Honey Bacon Appetizers

It is a recipe from The Pioneer Woman. Everything I've made from one of her recipes has been so good.

I wasn't sure about this recipe but I threw caution to the wind & gave it a whirl.

Baking time at 250 degrees is 2 hours. At the end of the 1st hour it smelled delicious!

I added 20 additional minutes at the end of the 2 hours because I wanted to make sure the bacon was crisp.

After they cooled for a few minutes I gave it a taste test . . . YUM!

Hubby ate one & gave it his approval.

Ingredients
1 package Club Crackers
1 pound Thin Sliced Bacon (or More Depending On Number Of Crackers)
Grated Parmesan Cheese
Optional Alternative: Brown Sugar Instead Of Parmesan Cheese
Preparation Instructions
Lay crackers (as many as you want) face up on a cookie sheet.
Scoop about 1 teaspoon of grated Parmesan cheese onto each cracker. Cut your package of bacon in half (or cut pieces individually) and carefully, so the cheese doesn’t fall off, wrap each cheese covered cracker in one half piece of bacon, completely covering the cracker. It should fit snugly around the cracker.
Place the bacon wrapped crackers onto a baking sheet that has a rack on it.
Place in a 250-degree oven for about 2 hours.

Blogger Problems & New Bear . . .

I've been having some problems with Blogger. Maybe you can offer some advice. A few days ago I was trying to add a new picture to my header & a message appeared telling me I had exceeded my picture quota. Upon future investigation it informed me I would need to buy more room for pictures.

UGH!
This morning some pictures from posts the past few days were missing & in their place were black squares with an ! mark. I reposted the pictures. Now I'm wondering if they'll stay there.

Have you ever experienced this? If so, what did you do?

My son was able to help me add a picture to my header yesterday. He showed me what to do next time.

After listening to the instructions (which went in one ear & out the other) I told him he could help me change the picture for February. HA! Strange thing about this mess is I can still add pictures when making a post. Go figure!

On a lighter note. . .

She was a Christmas gift from Kari's parents, Carol & Tim.

Packing away Christmas!

I dread it every year!

After I ate lunch I got a spark of inspiration to take down the little tree in my kitchen window.

It's inside the black trash bag.

The stockings have been on the bar stool since Christmas night.

I need to put the scalloped dishes back in the closet.

As you can see I haven't done much!

Sunshine is streaming in the kitchen window.

I feel sleepy. I think it's time for a power nap. Maybe I'll get another spurt of energy later.

Probably not . . . I'll let you know.

Christmas day was beautiful & sunny!

Of course, Christmas is always great when you have sweet faces like these to see!

Santa was very good to us this year!

The stockings were stuffed with lots of goodies . . .

and we had lots of gifts to open.

The first gift Ethan opened was a new shirt and pants.

He immediately wanted to know where the toys were!

So funny!

The next package he opened was a toy.

The smile says it all!

He loved his new race car track.

Emma was intrigued with Christmas tree lights.

She would roll & roll until she was under the tree.

This is Emma's gift. Ethan liked it a lot! I'm sure he'll show her how it works! Ha!

We enjoyed a delicious steak dinner at the Christmas table.

At the end of the fun filled day Emma was tuckered out and found a comfy place on Papaw's lap to fall asleep.

Right before the kids went home I was waving bye-bye to Emma & she started waving back.

This was the first time she tried waving.

What a nice Christmas gift for me!

Yesterday I received a handmade Christmas card from my sister, Susan. She has always had a talent for creating greeting cards even when she was a kid.

Here we are all dressed up for Christmas 1961.

Busy, Busy Weekend . . .

We had a busy weekend starting Friday night when the kids came over for 'Christmas movie night'.

We brought home some yummy food from . . .

We decided to watch . . .

It was just as funny as the first time we saw it in the theater.

Saturday morning I got my hair cut & styled.

This is the picture I showed the girl that was cutting my hair.

I jokingly told her I wanted to look this young.

I know, HA HA HA!

She did a good job.

Definitely an improvement.

My last haircut was in July & I was getting very shaggy.

What?

You don't think I look like the young girl in my example picture?

HA HA HA!!!

Next, hubby and I went to Lowe's to do a little shopping.

Can't tell you what we bought because it's a surprise.

Later in the day we went to K-Mart to do a little more shopping. BIG mistake! I was reminded why I like shopping on line! I'm still expecting a few more packages to arrive at my door.

We did a little stocking stuffer shopping at Walgreen Sunday afternoon.

Sunday evening we enjoyed a wonderful time of food and fellowship with some of Hubby's past and present co-workers. I forgot to take my camera so I don't have any pictures to share.

I had great intentions on Friday to start wrapping gifts, but my plans failed.

UGH!

I have all my supplies gathered by the kitchen table.

Note to self . . .

This tree is blinged out with many ornaments collected over the years. I love how hanging each ornament brings back memories from Christmases past.

These OSU Santas are always displayed upstairs in the TV room, but I decided to bring them downstairs this year since we won the Big 12 Championship.

Christmas Bling In The Dining Room . . .

I'm finally finished with Christmas Bling 2011!

Today I'm featuring the dining room.

If you've been reading my blog you may remember my post about

"red and white inspiration" for decorating this year.

I made the window valance with a tablecloth I made several years ago.

No sewing! I just folded it over the tension rod. Simple!

The table runner was made by cutting some fabric with pinking shears.

Again, not sewing!

Red napkins were folded to make a place mat for the plates and scalloped dishes.

I found the red and white ornaments at Hobby Lobby for 1/2 price.
The little red snowflakes are from Target's $1.00 section.

The only new things in the centerpiece are the 1/2 price snowflakes from Hobby Lobby
and the real, mini candy canes from Target.

My sister, Mary, gave me the lantern about 27 years ago.

Most of the ornaments are unbreakable and
safe for them to play with.

My plans for today include a lot of REST!
I'm pooped! I'm going to drink another cup of coffee,
read the paper and enjoy the fragrance of the red velvet cake candle

Christmas Kitchen Window . . .

I'm still decorating, but I did want to show you my kitchen window decorations.

This window is right over my sink and it's one of my favorite spots to decorate for any season.

During the Christmas season I have a beautiful view of the lights on the entrance to the subdivision across the street. Also, the first house has a gorgeous light display.

I just love my sweet little gingerbread man light that I won from a giveaway three years ago.

I bought this tree from QVC several years ago.

I decided to add some icicles this year.

There are no 'real' lights on this tree, just strings of faux lights from Hobby Lobby.

I don't have many ornaments on this tree, but each one has special meaning.

I'm so proud of the Cowboys!

They are Big 12 Champions!

From KTUL News Channel 8 website

Stillwater, Oklahoma. . .Third-ranked Oklahoma State dominated No. 10 Oklahoma in a Bedlam that was never close. The Cowboys made a statement, blowing out their rivals 44-10 Saturday night in Stillwater.

The win not only gives the Cowboys bragging rights for Bedlam, it gives the Pokes their first outright conference title.

OSU (11-1) rushed for 254 yards while at the same time, the defense forced five turnovers and limited the Sooners to just three points until late in the fourth quarter, when back-up quarterback Blake Bell scored on a 28-yard run.

Joseph Randle and Jeremy Smith each had two touchdowns on the ground. The defense also got into the scoring column when Richetti Jones scooped up a fumble by OU's Landry Jones and took it five yards to paydirt.

All week, Oklahoma State head coach Mike Gundy refrained from stumping for his team when it comes to the national championship game. But, that wasn't the case Saturday night.

"I think people have to decide whether they want to see a 9-6 game or a 39-36 game. And I think this is the opportunity for people to find out how good the defense is in the SEC. We'd love to have that challenge. I think our defense is better than what other people say. So, last week I said Alabama should be there. There's no question Oklahoma State should be number two right now, no question."

We'll have to wait to find that out. The final BCS rankings will be released Sunday evening.

Let me be one of the first to say, Merry Christmas!

My house looks like it has been through an Oklahoma tornado or earthquake!

Boxes & tubs full of Christmas bling look like they have exploded all over the place.

Despite this overwhelming mess I'm a happy lady.

Remember my post from Tuesday?

Those frustrating strings of Christmas lights went into the trash!

Last night Hubby and I went to Target.

Presenting my new string of LED lights!

Their bright white glow has made my little Christmas village sparkle and shine. I bought this little set of houses many years ago at a neat little discount store in my hometown for about $7.00. It came with little trees and figures.It was not lighted so I had to buy some lights to put in each one. I added a little school house I found at Dollar General and two larger trees from Hobby Lobby.

It looks like the children are having fun playing in the snow outside the elementary little red school house.

Next door to the elementary school is another school house for the village jr. and sr. high students.

In the center of town is the church. I can almost hear the bells ringing.

A bakery and train depot complete the village scene.

I think I'll write a story about the village so I can read it to Ethan and Emma every year.

Yesterday, with Hubby's help we managed to get the outside lights and wreaths finished.

We had a wonderful Thanksgiving gathering this year.

My sister, Susan, and brother-in-law, Mike drove in from Missouri on Wednesday.

The kids came over also. We spent the afternoon preparing most of the food for Thursday's feast.

There is nothing I need or ~~covet~~ want that would make me

attempt shopping on "Black Friday"!

When I see this picture I immediately think,

"What will they do if they need to use the bathroom?"

I enjoyed looking through all the ads in the newspaper yesterday.

I saw some good deals and gift ideas.

Still, I would never venture out to shop on the day after Thanksgiving.

I always get a good chuckle out of these commercials.

Her enthusiasm is still not enough to make

me go shopping at Target at midnight.

I'm baking cornbread for the stuffing and mixing up some dough for dinner rolls.

I found a recipe on Pinterest that can be mixed in advance and baked up to 3 days later.

(Have I ever mentioned how addicted I am to Pinterest?)

I have been a mess since Friday morning. Crying, praying, and constantly thinking about the families of the 4 people that were killed in the plane crash on Thursday.

Anyone who knows me well, knows that I am a proud OSU graduate and a huge fan of the football and basketball teams. This year's football season of being undefeated has given me great joy. Our defeat Friday night to Iowa State was very disappointing to me. The loss of a football game pales in comparison to the loss of the people in the plane crash. Football is just a game.

I think the following article that a friend posted on Facebook this morning sums up the feelings of the Cowboy family.

November 18, 2011, is a day Oklahoma State will never forget. It was a day where OSU fans, players and coaches awoke to the news of tragedy and went to bed with the bitter taste of defeat.

The details of what happened in between are a blur of tears and anger, sorrow and disbelief.

It had been 355 days since the Cowboys last fell on the gridiron but it had been more than 10 years since this close-knit community has had to deal with a far greater loss.

The tragic deaths of Oklahoma State women’s basketball coaches Kurt Budke and Miranda Serna, as well as two other OSU alums, shook the OSU fan base to its core. Then a 37-31 loss to Iowa State at Jack Trice Stadium poured salt in a much deeper wound.

OSU has suffered more than any school should and Friday just didn’t seem fair.

I typically travel to road games but, for whatever reason, I skipped the trip to Iowa.

Instead I found myself in Gallagher-Iba at a press conference that can only be described as surreal. It felt like a bad case of déjà vu as it was announced, yet again, that OSU had lost members of its basketball family in a plane crash.

No matter how trivial it might seem it the wake of tragedy, I found solace in the notion that the football team could provide some sort of quick relief, a minor painkiller for an ache felt throughout Cowboy nation.

Then the unimaginable unfolded in the Iowa plains.

OSU’s offense faltered. The defense stumbled. The special teams failed. And for the first time in nearly a year, a loss was marked on the schedule on the most painful of days for it to occur.

As I sat at my computer struggling to find the words to describe the indescribable events, I decided I needed to see something first hand before it would be possible.

I got in my truck and headed down the road to Stillwater Regional Airport. I needed to see the team land. I needed to see something positive, something important.

What awaited me at the airport was a touching scene that reminded me just how special the people of Oklahoma State truly are.

At 2:45 Saturday morning, the cold wind aimlessly ripped through the gathering of nearly 150 orange-clad faithful who were already frozen from the events of the previous day.

But then in the distance, a noise grew louder. It was the sound of the jet carrying the Cowboys safely back home. It is something we all too often take for granted but will be challenged to overlook again.

As the team exited the plane and approached a gate ill-fitting of the gathering on hand, the singing began.

“Proud and immortal

We Herald Your Fame

Ever You'll Find Us

Loyal and True

To Our Alma Mater

O-S-U.”

Coach Mike Gundy smiled as he appeared to fight back tears. Todd Monken doled out a few hugs. Several players gave high fives and, amid the overwhelming despair, signs of happiness could be found.

The sound that overtook the howling winds and the insufferable hum of desolation was the sound of cheering, providing a soundtrack to recovery from the loss of a team and the loss of lives before it.

The words of the alma mater took on an entirely new meaning. Loyal and true, indeed.

Sure, the national title hopes were lost amid the throngs of cardinal and gold who stormed the field to celebrate the biggest win in Iowa State football history. But the cold dose of reality from the morning helped to put things in perspective.

Monken described the loss as, “… a hard one to take for a long time.”

Brandon Weeden expressed his regret that they couldn’t deliver a win to assist in the healing process from the crash in the Arkansas hills and called it, “one of the hardest days in Oklahoma State history.”

Monken then added, “It’s one thing to lose early in the year, but it's another to get to this point and see the light at the end of the tunnel. We're 10-1, and I don't know if I've ever been 10-1 and felt so empty."

But that empty feeling preceded the warm arrival that awaited them in the early morning hours. That emptiness found some relief.

There is a light at the end of the tunnel. Maybe it’s not a title this season, but it was a light nonetheless.

That light was provided by the Cowboy fans at the airport and by those who were there in spirit.

The football team might not have won Friday night but you, dear Cowboy fans, are already winners.

This university, this athletic department and this community will overcome tragedy once again and the reason is you. There was undeniable proof that Oklahoma State will again rise above.

I know I will remember Nov. 18, 2011.

I will remember the pain of losing cherished members of the Cowboy family. I will remember watching OSU’s football championship dreams fade away. But most of all, I will remember how lucky I am to be a Cowboy and to be associated with people like you.

One sign at the airport terminal struck me in particular.

“KB and MS would be proud.”

There is no doubt.

OSU's Women Basketball Coach And Assistant Killed In Plane Crash

OSU says women's basketball coach Kurt Budke and assistant women's basketball coach Miranda Serna were killed along with two others Thursday night in a plane crash in Arkansas.

Please pray for the families, the team,

and all those affected by this tragedy.

Planning The Thanksgiving Menu . . .

I'm excited that my sister and brother-in-law will be joining us for Thanksgiving dinner this year.

Susan and I have been planning the menu over the phone.

We talked about how Thanksgiving dinners were when we were growing up.

Lots and lots of food. Many side dishes, salads, and desserts.

Our Grandma's, Minnie and Ruby, always seemed to be in competition to bring the biggest and best bowls full of the latest "new" recipes they had discovered.

Mother also liked to prepare great dishes, desserts, and bread.

Sometime in the 70s Mother introduced a new bread to the Thanksgiving feast.

Ever since then it has became a standard for holiday meals.

I have carried on the tradition.

Have you ever tried Dilly Bread?

You must try it!

Here is the recipe. . .

Dilly Bread

1 package yeast
1/4 cup warm water
1 cup cottage cheese heated to lukewarm
(I do this in the microwave.)
2 T. sugar
1 instant minced onion
3 T. butter
2 tsp. dill seed
1 tsp. salt
1/4 tsp. soda
1 egg
2 1/4 cups flour

Soften yeast in water.
Combine in mixing bowl
cottage cheese, sugar, onion, butter, dill seed, salt, soda, beaten egg an softened yeast.
Add flour to form a stiff dough, beating well after each addition.
Cover and let rise in warm place until light and doubles in size, 50 to 60 minutes
Knead down dough and turn into well greased 2 1/2 qt. round or oval casserole.
Let rise in warm place for about 40 minutes.
Bake in 350 degree oven for 25 to 30 minutes until brown
(crust will be dark brown).
Brush with butter.

The combination of dill & cottage cheese really make this delicious.
Hope you'll try it for your Thanksgiving meal.

* Note *
You can also make this in a bread maker.
Just dump everything in.
If you want to bakc it in a casserole dish just mix it on dough setting.

We got to spend some time with our Grandkids Sunday evening.

Before it got dark, Hubby took the kids for a wagon ride.

This was Emma's first wagon ride.

Riding in the wagon is one of Ethan's favorite things to do.

Pillow Pal, Bullet, joined them.

Our flaming red maple tree is absolutely beautiful this year.

The picture does not do it justice.

As you can see, our neighbor's tree has already lost its leaves.

Our tree is always one of the last trees to show Autumn colors.

I love it!

I want to say how grateful I am to all those who served in the past and those presently in the military.

Today I'm paying tribute to our nephew, Craig, who was a POW during the Gulf War in 1991.

On Monday, January 28, 1991 Craig was on a bombing mission in his Harrier jet over Kuwait when his aircraft was shot down. Other airmen in the area saw the Harrier explode when it hit the ground, but were unable to determine if Craig ejected from the aircraft. The following day our family was notified that he was missing in action. The Marine Corps requested that our family not make public statements regarding the situation. We had hope that maybe he got out of the plane before it crashed. We did not know if he was dead or alive. We were in constant prayer and were glued to the television in hopes of hearing any news about Craig. On March 5, 1991, our prayers were answered. Craig was released by the Iraqis in a group of 15 American POWS. He had been held near Basra. We later were told on his first day as a POW, his captors broke his left leg with a metal pipe and beat him with on ax handle. His leg was not treated. He was kept blindfolded, and handcuffed so tightly the nerves in his hand were crushed.

Yesterday was another eventful day . . . tornadoes, severe thunderstorms, flooding and another EARTHQUAKE! We felt the 4.7 quake at 8:46 PM. I know, CRAZY! Today we're having more thunderstorms. We desperately need the rain, but not the flooding.

A Whole Lot Of Shakin' Goin' On . . .

You have probably heard by now about the earthquakes
that occurred in Oklahoma over the weekend.

We did not feel the 4.7 quake that happened a little after 2:00 am Saturday morning.

When I woke up around 5:15 I saw lots of posts on Facebook
from neighbors and friends who were jerked awake by the shaking.

Hubby and I went about our day shopping at Sam's and
watching college football.
After the OSU victory over Kansas State around 10:45 pm,
I called my sister in Missouri then,
I jumped on Facebook to post a "Whoo-hoo !!!".
As I was typing the last ! (I never entered the "Whoo-hoo" post) I heard a distant noise.
I told Hubby to turn down the TV!
We heard a train like sound approaching from the southwest.
Suddenly, the shaking started and I kept yelling,
"Earthquake, earthquake, earthquake."
I told Hubby to call our son.
I called my sister back and told her what was happening.
The shaking and window rattling went on for at least a minute.
We soon found out that we had experienced a 5.6 earthquake.
My hands were shaking so bad as I read Facebook posts
and typed posts of my own.
Needless to say it took us quite a while to unwind and settle down
from our night of excitement about winning the ballgame
then a terrifying earthquake!
We were worn out yesterday.

One of my friends posted a fun recipe for
Earthquake Cake
on Facebook Saturday night and on her
blog, "I Have A Big Story To Tell" on Sunday.

Today was delightful!

A freeze warning has been announced for tonight.
