Peach Dumplings
Hubby found a recipe on Facebook that he wanted me to make with the remaining peaches from our trip to the orchard 2 weeks ago.  He peeled & pitted while I mixed up the sugar & butter mixture.  We used peach halves & Sprite instead of Mountain Dew.
Delicious!
I did eat a bite so I could officially say "delicious".

Peach Dumplings

2 whole large peaches
2 8 oz cans crescent rolls
2 sticks butter
1-1/2 cup sugar
1 tsp vanilla
cinnamon, to taste
1 12 oz can Mountain Dew

Peel and pit peaches. Cut both peaches into 8 slices, (our peaches small so we used halves). Roll each peach slice in a crescent roll. Place in a 9 x 13 buttered pan.
Melt butter, then add sugar and barely stir. Add vanilla, stir, and pour entire mixture over peaches. Pour Mountain Dew, (we used Sprite), around the edges of the pan. Sprinkle with cinnamon and bake at 350 degrees for 40 minutes. Serve with ice cream, and spoon some of the sweet sauces from the pan over the top

Sunflower Mantel

Happy Friday, everyone!
We had another rainy night, last night.  This morning it's cloudy with fantastic temps in 70's.  It's very unusual to get this much rain in July here in Oklahoma.

This little hang tag sums up why I love sunflowers.
I found an adorable free printable on Pinterest a few weeks ago that I knew would be perfect for making a banner for the mantel.
Free Printabe COMPLETE Alphabet and Number Burlap Banner
I love the polka dots.  If want to print some of your own go ---> here.
I may add a few more things, but for now I like the simple look.

Thanks a bunch for stopping by today.

When Life Gives You Lemons

When life gives you lemons . . .
make lemonade!
I changed up the dining table.
Why?
Because I needed a little splash of sunny yellow on this cloudy day.

Coming soon to add more sunny yellow, sunflowers.
Hope you're having a terrific Thursday!

Just Peachy

Our weather was not peachy last night.  We lost a limb on our big tree.  The winds were 70 to 80 miles an hour.  We were without cable, internet & phone for almost 12 hours.  We were lucky to have power, most of Tulsa is still out.

Now, here's the peachy part of this post.
 A recipe review from Pinterest.
Peach Crumble Bars

Ingredients:
For the Crumble:
3 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1 cup (2 sticks) unsalted butter, cold
1 egg, lightly beaten
For the Peach Filling:
5 cups diced peaches (about 7 peaches, peeled)
2 tablespoons lemon juice
½ cup all-purpose flour
1 cup granulated sugar
¼ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg

Directions:
Preheat the oven to 375 degrees F. Butter the bottom and sides of a 9-by-13-inch glass or light-colored metal baking pan. Put a long piece of parchment paper in the bottom of the pan, letting the parchment extend up the two short sides of the pan and overhang slightly on both ends. (This will make it easy to remove the bars from the pan after they have baked.) Butter the parchment.
For the Crumble: In the bowl of a stand mixer fitted with the paddle attachment combine flour, sugar, baking powder, salt and cinnamon on low speed. Add the butter, toss with a fork to coat with the flour mixture. Add egg and mix on medium-low speed until the texture resembles coarse cornmeal, with the butter pieces no larger than small peas. Pat half of dough into the prepared pan. Place reserved half aside. Place the pan and the remainder of the dough in the refrigerator while you prepare the filling.
For the Peach Filling: In medium bowl, gently toss diced peaches and lemon juice together; set aside.
In a separate small bowl, whisk together the flour, sugar, salt, cinnamon and nutmeg. Pour over the peaches and mix gently.
Spread the peach mixture evenly over the crust. Crumble the remaining dough over the peach layer.
Bake in preheated oven for 45 minutes, or until top is slightly brown. Cool completely on wire rack then transfer to the refrigerator to chill before cutting into squares. Store in an airtight container in the refrigerator.

My Peach Crumble bars.
Hubby said they were better than cobbler.  I did eat a tiny bite & I agree with him.
I bet they won't last long!

Summery Kitchen Table

Thank you all for the kind words of concern & prayers for my Hubby, Bob.  He has pain & soreness, but he was able to make it to work today. We are blessed & thankful that the wreck wasn't as bad as it could have been.

As promised, here is my kitchen table dressed for a summer meal.
All pictures were taken with my phone.  Sorry for the quality.  I'm still without a camera since I broke mine on the 4th.
The vintage tablecloth was 1 of 2 that I bought last week at my favorite junkin' place. I always get excited when I find something for 1/2 price.
The center arrangement is a collection of old bits & pieces from what I have collected over the years.
The place setting is perfect for a light summer meal.  Again, all these things are old.  The daisy plates & bowls were wedding gifts 38 years ago.  The green plates were a 1/2 price bargain from Kohl's several years ago.

It's going to be a hot & humid day in our neck of the woods. Hope you are staying cool wherever you live.

Not The Day I had Planned

My Monday did not go according to my plans.
I was going to do a tablescape with my new vintage tablecloth.
My Hubby called around 8:00 to tell me he had been in a 4 car pile up.  He was rear ended.
Thank the Lord, he was fine. He was even able to drive his pickup to work. We spent most of the afternoon in Urgent Care.  After an x-ray & meds prescription we were on our way.  He is in some pain & the meds seem to be helping.  We are thankful & blessed.
Come back tomorrow to see the completed summery tablescape.  I promise the tablecloth will be ironed.
